Chocolate cupcakes (made with cacao)

Raw cacao can play nicely with mainstream healthy diets – think delicious chocolate cupcakes like these…

Ingredients:

  • 2 cups raw, unsalted walnuts
  • 1 cup dates, pits removed
  • 1/4 cup cacao powder
  • 2 tbsp coconut butter (available in health food stores)
  • 1 tbsp vanilla extract
  • 1/2 cup maple syrup

Preparation:

Mix all ingredients in a food processor, roll mixture into balls and press into cupcake patties.

Chocolate icing

  • 4 tbsp maple syrup
  • 2 tbsp cacao powder
  • 2 tbsp almond butter
  • 2 tbsp coconut butter

Method

Mix in processor and spread on cupcakes.
